Dinner and Movies

After lots of eating out and indulging of many beverages this weekend, Sunday became a much needed day of relaxation, home cooking, fresh veggies and some good movies.

When planning the menu, a recent cup of delicious watermelon gazpacho came to mind from a dinner with Jon's Uncles a few nights ago. So we tried our hand at it and I must say, it was incredible! Such a wonderful summer dish and easy!

Start with a big ol' watermelon, a red bell pepper, a cucumber, parsley, basil and a chill pepper and chop it all up. The chopping is what takes the longest but looking at all the yummy fresh veggies and herbs is worth it. Plus you get to snack on watermelon while you work!


Then throw it all together for a juicy combination. It was hard not to eat it just like that! Bring out the blender at this point and throw it in there to purée. Almost four batches is what it took and then transfer into another large bowl, or in our case, a large pot.


Spice time! This is really the part of the recipe where you can just run with it. Our's had a lot of salt, pepper, garlic powder, cayenne, olive oil and some fantastic champagne white vinegar I have started putting on everything.




After, it is off to chill. This little one satin the refrigerator for two and a half hours while we watched a movie before True Blood time.



Now you have one amazing gazpacho! This delightful dish was served with a fresh salad with pecans, the previously mentioned vinegar, olive oil and spices as well as some fried polenta. Both paired excellently with the gazpacho and were a perfect summer treat.




Yum yum yum! It was truly amazing! Everyone should try it out, especially on these very hot days down South.

We ate our meal to the ever sexual, violent and mythological True Blood; such a guilty pleasure. Well, maybe not so guilty! This was followed by Machete, the great grindhouse, Mexican themed B movie. Check that out if you are a fan of the genre or Mexican superheroes.

It is after meals like this that one frowns on the meals for the next day; always hard to top!
